Ragi or Finger Millet has number of benefits I would like to share few with you. It has high fiber content & improves immunity health of your kids, good for diabetes patients & cost friendly too. Making this instant Ragi paniyaram really worked well with my little one. She said these cookies are yummy tastes great with your tomato chutney ma. I really delighted with her compliments. This simple & instant paniyaram definitely satisfies your little one's tummy.

Ingredients Needed
Ragi/Finger millet Flour-3/4cup*
Rice flour-1/2Cup + 1tbsp
Rava/Sooji/Semolina -1/4Cup + 2tbsp
Sour Buttermilk-1/2Cup
Water-1Cup
Salt-as needed
Cooking Soda-a pinch

To Temper
Oil-1tsp
Mustard seeds-1/8tsp
Urad dal-1/2tsp
Hing-a pinch
Onion Big-1(finely chopped)
Curry leaves-few(finely chopped)
Coriander leaves-few (finely chopped)
Grated Carrot-1/4cup

*1Cup=240ml

Preparation
  1. Take a bowl & add 3/4Cup Ragi/Finger millet Flour, 1/2Cup+1tbsp Rice flour, 1/4cup+2tbsp Rava/Sooji/Semolina & needed Salt.
  2. Add 1/2Cup Sour buttermilk to this. Add 1Cup water gradually to the bowl.
  3. Mix it gently with whisk. Rest this batter for minimum 1hour.
  4. Heat the kadai with 1tsp Oil, once the oil is hot add 1/8tsp Mustard seeds when it splutters add 1/2tsp Urad Dal & a pinch of Hing.
  5. When dal turns golden color add 1 Finely chopped big onion to this & saute it for a minute.
  6. When it turns transparent add finely chopped curry leaves & switch off the flame.
     
  7. Add this Tempered items to the batter.
     
  8. Add 1/4Cup grated carrot, Finely chopped Coriander leaves & Pinch of cooking soda to the batter & mix it well.
  9. Heat the Paniyaram/Appe pan, add a drop of oil on each cavity.
  10. Once its hot, Mix the batter well & Pour it on each cavity. Add a drop of oil on each cavity once again. Close it & allow it to cook for 2 minutes.
  11. After 2minutes turn the Appe/Paniyaram & Cook it on the other side.
  12. Serve hot with any chutney or even Tomato ketchup. We had with Tomato Chutney. 
Notes
  1. Add Cooking soda only before you make Paniyaram/Appe.
  2. Adding Cooking soda make your Paniyaram/Appe soft. If you don't like it you may skip it.
  3. Adding rava/Sooji/Semolina make your Paniyaram/Appe crispy.
