Welcome back to me😁. Sweet tooth needs some yummy recipes right? yes, Here we go for Carrot Halwa. Because I decided to give healthy dessert for my little one so I choose Carrot Halwa. This simple & yummy recipe satisfy your sweet tooth as well as your health. To my wonder Halwa is vanished on the same day itself. I used white sugar & organic brown sugar in the same ratio for health concern. This carrot halwa is the famous recipe here which prepared during Winter season with special delhi carrots. The color of the halwa varies based on variety of the carrots used either orange or red. My recipe had little discoloration because I used organic brown sugar but taste was awesome I guarantee it.

Ingredients Needed
Ghee-2tbsp
Cashews-6 to 8
Grated Carrot-2Cups*
Milk-2Cups*
White Sugar-1/4cup* + 2tbsp
Organic Brown Sugar-1/4cup* + 2tbsp
Cardamom-1pod
Salt-a pinch

*1Cup-240ml

Preparation
  1. Heat the kadai with 1tbsp Ghee , Once its hot add 6 to 8 cashews & fry it in the ghee till it gets nice golden color & keep aside in the bowl
  2. Add 2Cups Grated carrot to the kadai & saute it for 2minutes
  3. Color of the carrot started to change
  4. Add 2cups Milk(already boiled & cooled) to the kadai. Cook it in medium flame
  5. Close the kadai with lid. Allow the Carrots cook in the Milk itself for 7 to 10 Minutes. Open & mix it well in between
  6. Carrot starts to absorb Milk. Add 1/4Cup + 2tbsp White Sugar & 1/4Cup + 2tbsp organic brown sugar or 3/4Cup White Sugar or 3/4Cup Organic brown sugar also
  7. Sugar starts to melt & oozes out water. Saute it well for 5 to 7 minutes continuously. Add 1pod Cardamom or 1/4tsp Cardamom Powder to the halwa & Mix it well
  8. Add 1tbsp Ghee to the Halwa & Mix it well 
  9. When Ghee starts to leave on the edges switch off the flame. Garnish with fried cashews
  10. Serve hot or cold. It taste great when it is warm
Notes
  1. I used organic brown sugar for health concern. Plain white sugar can also be used
  2. Very less ghee only required for this recipe
  3. When milk is absorbed all we need to do is sauting without leaving 
  4. Replace Plain chopped almonds for fried cashews 
  5. Cooking time varies based on the quantity of the carrots used
