Vendakai Pakoda is the Simple & yummy recipe to make within 20 minutes. This crispy & crunchy pakoda goes well with any kind of rice or even as a starter or can be served as evening snack. Ladies finger hated by people because of its slimy texture when it is overcooked. To avoid such wash ladies finger well & wipe it with dry towel / kitchen linen or allow it to dry for minimum 20 to 30 minutes. This recipe can be done by deep fry or baking method both tastes great.

Ingredients Needed
Vendakai/Ladies Finger/Okra-1/4kg
Besan/Chickpea flour-2tbsp
Rice Flour-1tbsp
Corn Flour-1tbsp
Turmeric Powder-1/4tsp
Red Chili Powder-1/2tsp
Coriander Powder-1/2tsp
Curd-1tsp
Curry leaves-few
Vegetable Oil/Ground nut oil-for deep frying
Salt-as needed

Preparation
  1. Wash Ladies Finger/Okra well & dry it with kitchen towel & Cut it into 1/2inch pieces
  2. Add 2tbsp Besan/Chickpea flour, 1tbsp Rice Flour, 1tbsp Corn flour, 1/4tsp Turmeric Powder, 1/2tsp Red chili powder, 1/2tsp Coriander powder & salt as needed.
  3. Toss it well to coat ladies finger/okra with flour. Add 1tsp Curd 
  4. Gently mix it with your hands carefully
  5. Heat the oil in the kadai
  6. Once the oil is hot drop one piece of ladies finger/okra to the oil to check the oil is hot enough. Ladies finger/okra piece should raise immediately. Drop ladies finger/okra pieces carefully in the oil & allow it to cook on both sides
  7. Dry it in the paper towel & serve hot as a evening snack or starter or side dish for any rice. Fry few curry leaves in the oil & garnish it on the ladies finger/Okra Pakora. We had with Curd Rice😊 
Notes
  1. Adding curd to the flour & ladies finger/okra gives nice color to the pakora
  2. Recipe can be done by baking methods too.
  3. No need to rest the pakora mix before frying as ladies finger/okra oozes out water & drink more oil as well as takes more time to cook
  4. Any vegetable oil/Ground nut oil can be used for frying
