Sepang kizhangu Fry is the easy south indian side dish recipe which goes well with any variety rice / sambar / Rasam or even Curd rice. Usually we all end up with watery & sticky Sepang kizhangu poriyal which kids never prefer to eat. Because it gets slimy texture after boiling.This Sepang kizhangu / Arbi pan fry recipe is crispy outside & soft inside. I bet all you need is just a tsp of oil & good quality sepang kizhangu that's it with this crispy & crunchy sepang kizhangu fry will be ready in 20 minutes.

Ingredients Needed
Sepang Kizhangu / Arbi-1/2kg
Turmeric Powder-1/4tsp
Red chili Powder-3/4tsp
Coriander Powder-3/4tsp
Jeera Powder-1/4tsp
Salt-as needed
Corn flour-1.5tbsp
Rice flour-1.5tbsp
To Temper
Oil-1tsp
Mustard Seeds-1/4tsp
Urad Dal-1/2tsp
Hing- a pinch
Curry leaves-few
Preparation
- Wash Sepang Kizhangu / Arbi well for twice & Pressure cook it for 2whistles
- Once the pressure settles down take Sepang kizhangu/Arbi outside & allow it to cool. Take out the skin from Sepang kizhangu/Arbi and chop it to the circle shaped pieces
- Take chopped Sepang kizhangu/arbi to the mixing bowl, add 1/4tsp Turmeric Powder, 3/4tsp Red chili Powder, 3/4tsp Coriander Powder, 1/4tsp Jeera Powder & needed salt. Toss it well to coat masala evenly on Sepang kizhangu/Arbi
- Add 1.5tbsp Corn flour, 1.5tbsp Rice flour to the bowl
- Heat the pan with 1tsp oil, add 1/4tsp Mustard seeds when it splutters add 1/2tsp Urad dal when dal turns golden color add a Pinch of hing & few fresh curry leaves
- When curry leaves turns crisp add Speang kizhangu/Arbi which coated with masala & flour
- Toss the pan carefully
- Close the pan & allow to cook it around 20minutes. Open, Check & toss the pan in regular intervals
- Sepang kizhangu/Arbi fry is ready to serve
Notes
- Pressure cook Sepang Kizhangu/Arbi only for 2 whistles
- Adding Corn flour to the recipe make it soft & crispy
- Do not use ladle while frying Speang kizhangu/Arbi to avoid sticky version fry
