Potato is all time favorite not only for kids for all of us. Simple Potato fry with just 2tsp of oil makes your lunch yummy and unforgettable. Using less oil with half boiled potato makes this recipe delicious. This potato fry goes well with Curd rice/any variety rice/Sambar rice or even rasam rice. This recipe takes only 15-20 mins to make. Potatoes are rich in fiber and makes you to feel full. Use minimal water while boiling the potatoes which avoids losing nutrients.

Ingredients Needed
Potato-3 big size
Turmeric Powder-1/4tsp
Red Chili Powder-1/4tsp
Sambar Powder-1tsp
Salt-as needed
To Temper
Oil-2tsp
Mustard Seeds-1/4tsp
Urad Dal-1/2tsp
Hing-a pinch
Curry leaves-Few
Preparation
- Take 3big potatoes. Wash it, peel it & chop it into small cubes. Add water to this & half boil it.
- Heat the pan with 2tsp oil, add 1/4tsp Mustard seeds when mustard seeds splutters add 1/2tsp Urad dal once dal turns golden color add a pinch of hing & few washed curry leaves. let the curry leaves fry well in the oil.
- Drain the water from the potatoes & add it to the pan & toss it.
- Close the pan & allow to cook for 10minutes. Toss it in between for even cooking.
- Add 1/4tsp Turmeric Powder, 1/4tsp Red chili Powder, 1tsp Sambar Powder to the pan.
- Toss it to coat the masala evenly on potatoes.Close the pan with lid allow to cook for 10 minutes, open and toss it in the regular intervals to get even cooking.
- Add needed salt & toss it well.
- Potato fry is ready to serve.
Notes
- Half boiling potatoes takes less cooking time & ends in crispy potato fry(soft inside & crisp outside).
- Avoid using ladle to saute which gives you sticky potato fry.
- Add salt in the end else it will give you little watery kind of potato fry.
