Coriander Rice | Kothamalli Satham | How to make Coriander Rice - Naughty Little BEES Kitchen

Winter started in Delhi with lots of pollution. But we do enjoy the weather with hot coffee & lots of snacks. Usually some of the vegetables like drumstick, coriander leaves won't be available in summer(from may to august) during winter(from November to February)  some of the vegetables like ridge gourd, snake gourd, mint leaves won't be available. After seeing the coriander leaves I was over excited, so many recipes with coriander leaves like coriander thokku, coriander chutney, coriander rice & so on was running in my mind(I look at the dishes mouthwatering in my dreams). I can felt the nice aroma of my sambar & rasam now by garnishing it with coriander leaves(over build up? 😁its ok).This is the Coriander rice made with some biryani spices.

Ingredients Needed
Cooked Rice-1Cup*
Onion-1(big)
Tomato-1(big)
Ginger Garlic paste-1/2tsp
Salt-as needed
To Grind
Coriander leaves-1Cup*
Green chili-2to3
To Temper
Ghee-1tbsp
Bay Leaf-1
Cinnamon-1 small piece
Clove-1

Preparation
  1. Wash 1Cup coriander leaves, chop it & put it in the blender with 2-3 Green chilies. Make them as a paste & keep it aside
  2. Heat the kadai with 1tbsp ghee, add 1Bay Leaf, 1samll piece cinnamon,1clove
  3. Add chopped 1big onion and saute it well till it turns transparent
  4. Add 1/2tsp of Ginger garlic paste & saute it till the raw smell goes off 
  5. Add chopped 1 big tomato and saute it for 2 minutes
  6. Once the tomatoes turns mushy add coriander green chili paste 
  7. Add little salt & mix it well 
  8. Add cooked rice & mix it well
  9. Add necessary salt & mix it well
  10. Serve hot with any kind of raita/potato curry/any pakora. We had with baked gobi 65

Notes
  1. While making Coriander leaves & green chili paste add 1tbsp water if needed
  2. Cook the basmati rice with the proportion of 1:2(Rice : water) respectively
