Beetroot is the good source of potassium & lower blood pressure. But usually kids don't prefer to eat vegetables plainly boiled or sabji. So adding the vegetables wisely in your kids menu its a great idea. Very simple rice variety with chosen vegetables make it healthy & yummy. When we get bored of usual recipes I try this and give it to my little angel & believe me she loved the color of the recipe😊 attempt succeeded. My family loved it too. You can make this recipe for lunch & goes well for lunch box too.

Ingredients Needed
Cooked Rice-1Cup*
Grated beetroot-2 medium sized
Onion-1big
Ginger garlic paste-1/2tsp
Green peas-handful(optional)
Turmeric powder-1/4tsp
Red chili powder-1/2tsp
Coriander powder-1/2tsp
Garam masala powder-1/4tsp
Salt-as needed
Lemon Juice-1tbsp
Coriander leaves-few finely chopped(to granish)
To Temper
Ghee-2tbsp
Bay leaf-1
Cinnamon-1small piece
Clove-1
Curry leaves-few
*1Cup=240ml
Preparation
Notes
- Cook the basmati rice(1cup=2.5 cups water) & separate the rice grains with fork & add oil & little salt
- Add water to the rice as per your rice quality
- Add handful of cooked green peas or frozen peas to enhance the taste
- Adding few cashews if you wish
