Navaratri | Dussehra special - Ragi Semiya Payasam | Finger Millet Vermicelli Kheer | How to make Ragi Semiya Payasam - Naughty Little BEES Kitchen

Finger millet is very good immunity booster not only that rich in fiber too. Diabetes patients replace their usual breakfast recipes with millets. Usually I make millet recipes like Ragi dosa, Ragisemiya upuma, Ragi paniyaram (sweet & savory), Ragi malt(sweet & savory) and so on. Now Navaratri is coming so decided to make plenty of kheer recipes daily for neivedhyam so tried this recipe before Navaratri. This was wonderful recipe & simple too

Ingredients needed
RagiSemiya/Finger millet vermicelli--1cup*
Hot milk-2cups
Brown Sugar/White Sugar-4-5tbsp
Cardamom Powder-1/4tsp
Ghee-1tbsp
Cashews-1tbsp
Raisins-1tbsp

*1cup-240ml

Preparation
  1. Heat the kadai with 1tbsp of ghee
  2. Add 1tbsp Cashews to this & fry it little
  3. When it starts changing in color add 1tbsp of raisins & keep it aside in a plate
  4. Add 1cup ragi semiya/Finger millet vermicelli to the same kadai
  5. Fry it for 5minutes
  6. Add 2cups hot milk to the kadai
  7. Allow finger millet vermicelli to cook in the milk. After 5 minutes vermicelli starts to absorb milk. Check whether vermicelli is cooked well
  8. Add 1/4tsp of cardamom powder & mix it well
  9. Add 4-5tbsp of brown sugar to this.
  10. Switch off the flame & mix the kheer well. Sugar gets settled well with kheer in the heat itself
  11. Garnish with the fried nuts
  12. Transfer it into the bowl & serve it hot

Notes
  1. Any kind of sugar(white or brown) can be used. Jaggery powder can also be used
  2. Once it cools kheer will get thicken as Finger millet vermicelli absorbs milk. Add more milk when needed
  3. Sugar measurement which I mentioned is just right if you need add 1more tablespoon
  4. Grated coconut can also be used before adding sugar to enhance the flavor
