We all love to eat sweets and kesari is one of the default sweet we can easily make for any neivedhyams or any occasions.Its the easy and simple recipe which can get ready with few ingredients and takes very less time to prepare.We can make plenty of varieties to make your kesari rich like Mango Kesari,Pineapple Kesari,Mixed fruit Kesari. In my family this recipe got big hit and they all enjoyed the taste of the recipe til last bite.

Ingredients needed
Pineapple(finely chopped)-1Cup*
Sooji/Rava-3/4Cup
Sugar-1.5Cup
Water-2Cups+1/4Cup
Cardamom Powder-1/4tsp
Ghee-3tbsp
To Temper
Ghee-1tbsp
Cashews-6
Raisins-few
*1Cup-240ml
Preparation
- Heat kadai with 1tbsp of ghee and dry cashews and raisins nicely.and keep it aside in a plate
- Roast the Sooji/Rava with the remaining ghee until nice aroma comes.Keep this also aside in the plate
- Add water and allow it to boil
- When water starts to roil boil,keep the flame low add sooji slowly and mix it well together without any lumps.Mix it well till all the water absorbed by sooji
- Add sugar to the sooji and mix it well. Sugar also starts leaving the water
- You can add finely chopped pineapple and close it, allow to cook.Keep stirring in regular intervals to avoid burning
- You can add yellow food color in this stage but i added turmeric powder instead of food color
- Add cardamom powder to this
- Allow to cook for 10 more minutes and add fried cashews and raisins
- Pineapple kesari is ready
Notes
- Add Sooji slowly to the boiling water and mix it without any lumps, If lumps formed then it will spoil the recipe
- You can add pineapple paste instead of finely chopped pineapple
